Ingredients

  • Whole pig (approximately 15–20 kg / 33–44 lb), cleaned and prepared — 1
  • Lemongrass, bruised — 1 bunch
  • Garlic, crushed — 6 cloves
  • Salt, plus extra for the skin — 60 g (2 oz)
  • Black peppercorns — 2 tbsp
  • Vinegar dipping sauce with garlic and chilli, to serve

Method

  1. Stuff the cavity of the pig with lemongrass, garlic, salt and peppercorns.
  2. Sew or skewer the cavity closed securely.
  3. Mount the pig onto a large spit, ensuring it's balanced for even rotation.
  4. Prepare a large, steady charcoal or wood fire.
  5. Slowly roast the pig over the fire, rotating continuously, for 4–6 hours depending on size, basting the skin periodically with a little oil or vinegar to help crisping.
  6. In the final 30–45 minutes, increase the heat slightly to fully crisp and crackle the skin.
  7. Let rest briefly, then carve, being careful to serve pieces with the prized crackling skin intact.
  8. Serve with a vinegar-garlic-chilli dipping sauce.
