  • 200 g kabocha squash, cut into chunks (7 oz)
  • 1 carrot, cut into rolling wedges
  • 100 g konnyaku, sliced and scored (3.5 oz)
  • 300 ml dashi stock (1 1/4 cups)
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar

  1. Parboil konnyaku slices for 1 minute to remove any bitterness, then drain.
  2. Combine dashi, soy sauce, mirin and sugar in a saucepan and bring to a simmer.
  3. Add carrot and konnyaku first, simmering 5 minutes, then add kabocha.
  4. Cover with a drop-lid so it rests directly on the ingredients, and simmer gently for 15-20 minutes until vegetables are tender but not falling apart.
  5. Remove from heat and let sit for 10 minutes off the heat to allow flavours to absorb further before serving.
