Ingredients
- Millet or sorghum flour — 280 g (10 oz)
- Water, divided — 960 ml (32 fl oz)
- Fresh okra, sliced — 300 g (10.5 oz)
- Dried or fresh fish or meat — 200 g (7 oz)
- Onion, chopped — 1
- Tomatoes, chopped — 2
- Oil — 2 tbsp
- Salt — to taste
Method
- For the sauce, heat oil in a saucepan and sauté the onion until soft.
- Add the tomatoes and cook down for 5 minutes.
- Add the fish or meat and 1.5 cups of water, then simmer for 15 minutes.
- Add the sliced okra and continue simmering for 10 minutes until the sauce turns glossy and slightly thickened.

- For the tô, bring the remaining water to a boil in a heavy pot.
- Gradually whisk in the millet flour, stirring constantly to avoid lumps, until a thick paste forms.
- Reduce heat and continue stirring vigorously with a sturdy spoon for 8–10 minutes until the dough becomes smooth, stiff and pulls away from the sides of the pot.
- Shape the tô into a mound on a serving plate and serve alongside the okra sauce.
