Ingredients

  • Cabbage, shredded — 1/2
  • Carrots, grated — 2
  • Onion, chopped — 1
  • Red bell pepper, chopped — 1
  • Tomatoes, chopped — 2
  • Curry powder — 1 tsp

  • Water — 120 ml (4 fl oz)

Method

  1. Heat the oil in a large pan and sauté the onion until softened.
  2. Add the curry powder, cooking briefly.
  3. Add the shredded cabbage, grated carrot and chopped pepper, stirring to combine.
  4. Add the chopped tomatoes and water, and simmer for 15–20 minutes until the vegetables are tender.
