Ingredients
- All-purpose or bread flour — 500 g (4 cups)
- Warm water — 300 ml (1 1/4 cups)
- Instant yeast — 7 g (2 1/4 tsp)
- Sugar — 5 g (1 tsp)
- Salt — 8 g (1 1/2 tsp)
- Vegetable oil — 20 ml (1 1/2 tbsp)
- Sesame or nigella seeds — 10 g (1 tbsp)
Method
- Dissolve yeast and sugar in warm water; let stand for 5 minutes until foamy.
- Mix flour and salt in a large bowl, then add the yeast mixture and oil, kneading into a smooth dough for 8-10 minutes.
- Cover and let rise in a warm place for 1 hour, until doubled.
- Preheat oven to 250°C (480°F) with a baking tray or stone inside.
- Divide dough into 4 portions and roll each into a long oval, about 1cm thick.
- Press a few grooves into the surface with your fingers and scatter with seeds.
- Bake for 8-10 minutes until puffed and lightly golden with blistered spots.
