Ingredients

  • 200 g (1 cup) brown lentils, rinsed (7 oz)
  • 200 g (1 cup) short-grain rice, rinsed (7 oz)
  • 3 large onions, thinly sliced
  • 4 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 900 ml (3.75 cups) water (30 fl oz)
  • 200 g (3/4 cup) plain yoghurt, to serve (7 oz)

Method

  1. Simmer the lentils in the water for 15 minutes until just tender.
  2. Meanwhile, fry the onions in 3 tbsp olive oil over medium heat, stirring occasionally, until deeply golden and caramelised, about 25 minutes. Remove half for garnish.
  3. Add the rice, cumin, salt and pepper to the lentils and remaining onions in the pot.
  4. Cover and simmer on low heat for 18 minutes until the rice is tender and liquid absorbed.
  5. Rest, covered, for 5 minutes off the heat.
  6. Fluff gently and top with the reserved caramelised onions.
  7. Serve warm or at room temperature with a side of plain yoghurt.
