Ingredients

  • Raw groundnuts (peanuts), in shell or shelled — 300 g (2 cups)
  • Cooking oil, only if pan-roasting shelled nuts — 5 ml (1 tsp)
  • Salt — 5 g (1 tsp)
  • Chili powder, or to taste — 2 g (1/2 tsp)

Method

  1. Preheat the oven to 180°C (350°F), or heat a dry heavy frying pan over medium heat if roasting on the stovetop.
  2. Spread the raw groundnuts in a single layer on the baking tray, or in the dry pan.
  3. Roast in the oven for 15–18 minutes, shaking the tray halfway, until the skins darken slightly and the nuts smell fragrant; or stir constantly in the pan for 10–12 minutes over medium heat.
  4. Remove from heat and let cool for 5 minutes (they crisp further as they cool).
  5. Toss the warm groundnuts in a bowl with the salt and chili powder until evenly coated.
  6. Serve warm or at room temperature in a small bowl.
