Ingredients

  • Whole kingfish (or a similar firm white fish, about 1.5 kg / 3.3 lb), cleaned — 1
  • Garlic, minced — 4 cloves
  • Lime juice — 2 tbsp
  • Ground cumin — 1 tbsp
  • Chilli powder — 1 tsp
  • Oil — 60 ml (2 fl oz)
  • Rice — 370 g (13 oz)
  • Lemon, zested and juiced — 1
  • Water — 720 ml (24 fl oz)
  • Salt — to taste

Method

  1. Score the fish a few times on each side and combine with garlic, lime juice, cumin, chilli powder, oil and salt, rubbing the marinade thoroughly over and inside the fish.
  2. Let marinate for at least 1 hour.
  3. Preheat the oven to 200°C (400°F) or prepare a grill.
  4. Roast or grill the fish for 30–35 minutes, basting occasionally, until cooked through and lightly charred.
  5. Meanwhile, cook the rice with the water, lemon zest, lemon juice and salt, covered, for 18–20 minutes until tender.
  6. Serve the whole fish over the lemon rice.
