Masgouf (Grilled Marinated Carp)

Ingredients
- 1 whole carp (about 1.5 kg / 3 lb), butterflied
- 60 ml (1/4 cup) olive oil
- 2 tbsp tamarind paste
- 1 tsp ground turmeric
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
Method
- Butterfly the fish, keeping the two halves attached at the back, and score the flesh lightly.
- Whisk together olive oil, tamarind paste, turmeric, salt, pepper and garlic to make the marinade.
- Rub the marinade generously over both sides of the fish and let sit for 30 minutes.
- Skewer the fish open flat and position it upright beside a hot wood fire, flesh side facing the flame.
- Grill for 35–45 minutes, basting occasionally, until the flesh is fully cooked and lightly charred.
- Serve whole with flatbread, sliced onion and lemon wedges.
