Introduction: Plain, golden cornmeal porridge cooked to a smooth, firm consistency, the essential side dish underlying much of Moldovan cooking.
Cultural Background: Plain mămăligă serves as the neutral, starchy backbone to countless Moldovan meals, standing in for bread or potatoes and pairing naturally with the country’s stews, sarmale and roasted meats.
Tips: Stir constantly, especially toward the end, to prevent lumps and scorching. A wooden spoon and a heavy pot help distribute heat evenly for the best texture.
Variations: Use a mix of cornmeal grinds for a more traditional, slightly coarser texture. Add a splash of milk instead of some water for a richer version.
Storage: Refrigerate leftover mămăligă in an airtight container for up to 2 days.
Reheating: Reheat by slicing and pan-frying briefly, or microwave with a splash of water, covered.
