Ingredients

  • Whole leg of lamb or small whole lamb — 1 (roughly 3–4 kg / 6.5–9 lb)
  • Oil — 1/4 cup (60 ml / 2 fl oz)
  • Garlic, minced — 6 cloves
  • Ground cumin — 2 tbsp
  • Paprika — 1 tbsp
  • Chilli powder — 1 tbsp
  • Salt — 2 tbsp
  • Juice of 2 lemons

Method

  1. Combine the oil, garlic, cumin, paprika, chilli powder, salt and lemon juice into a thick marinade.
  2. Rub the marinade all over the lamb, working it into any scored areas of the meat, and let marinate for at least 2 hours, ideally overnight in the refrigerator.
  3. If using a spit, roast over medium coals for 3–4 hours, turning regularly and basting with any remaining marinade, until the internal temperature reaches 68–71°C (155–160°F) for medium and the meat is very tender.
  4. If roasting in an oven, cook at 160°C (325°F) for 3–3.5 hours, basting occasionally, until tender and well browned.
  5. Let the meat rest for 15–20 minutes before carving and serving to the gathered family.
