Ingredients
- 700g (1 1/2 lb) malanga (taro), peeled and chopped
- 2 tbsp olive oil or butter
- 1 garlic clove, minced
- Salt and pepper, to taste
- 2 tbsp warm milk or coconut milk, as needed
Method
- Boil the malanga in salted water for 20–25 minutes until very tender.
- Drain well and return to the pot.
- Add the oil or butter and garlic, then mash until smooth, loosening with a little warm milk as needed.
- Season with salt and pepper and serve warm.
