Introduction: A soft, pillowy round flatbread, traditionally split and filled with grilled meats like kebapi, a staple bread across North Macedonia.

Cultural Background: Lepinja is closely tied to the Balkan tradition of grilled meat dishes, its soft, absorbent texture designed specifically to soak up the juices and flavours of kebapi and other grilled fillings.

Tips: Shape the discs evenly so they puff up uniformly in the oven. A hot oven helps the bread rise quickly and develop a light, soft texture.

Variations: Sprinkle the top with sesame seeds before baking. Split and fill with kebapi, onion and ajvar for the classic sandwich presentation.

Storage: Store at room temperature wrapped in a cloth for up to 1 day; freeze for longer storage.

Reheating: Warm briefly in an oven at 180°C (350°F) for 5 minutes to refresh.
