- Butter — 30 g (2 tbsp)

Method
- Preheat oven to 180°C (350°F). Grease the baking dish with butter.
- Cook macaroni in salted boiling water until just al dente, about 8–9 minutes. Drain well.

- Add threequarters of the grated cheese, evaporated milk, beaten eggs, onion, ketchup, mustard powder, salt, black pepper, and scotch bonnet if using. Mix thoroughly.
- Pour into the prepared baking dish, spreading evenly, and top with remaining cheese.
- Bake for 35–40 minutes until the top is golden and a knife inserted comes out clean (internal temperature 71°C/160°F).
