Ingredients

- - Vegetable oil — 30ml (2 tbsp)
- - Water — 800ml (3 1/3 cups)
- - Salt — 6g (1 tsp)
Method
- Drain the soaked beans and place in a pot with fresh water; parboil for 10 minutes, then drain.
- In the same pot, heat oil and sauté onion and garlic until softened.
- Stir in tomato paste and cumin and cook for 1 minute.
- Return the beans to the pot with fresh water and salt.
- Simmer covered for 40-45 minutes until the beans are tender and the sauce has thickened.
