Lenten Stuffed Cabbage Rolls
The Quirky Foodster Team

Ingredients
- 1 large head pickled or fresh cabbage, leaves separated (12-16 leaves)
- 200 g (1 cup) short-grain rice, rinsed
- 200 g (3 cups) mushrooms, finely chopped
- 1 large onion, finely diced
- 2 carrots, grated
- 3 tbsp sunflower oil, divided
- 2 tbsp tomato paste
- 500 ml (2 cups) vegetable stock
- 1 tsp sweet paprika Salt and black pepperSalt and black pepperto taste
- 2 tbsp fresh parsley, chopped
Method
- If using fresh cabbage, blanch the whole head in boiling water for 3-4 minutes to soften the leaves, then carefully peel off individual leaves. If using pickled cabbage, rinse leaves lightly if very sour.
- Heat 2 tablespoons of oil in a frying pan and sauté the onion until translucent, about 5 minutes.
- Add the mushrooms and carrots, cook for 8-10 minutes until softened and most liquid has evaporated.
- Stir in the rice, paprika, salt, and pepper, and cook for 2 minutes to coat the rice in the oil.
- Remove from heat and let the filling cool slightly. Trim the thick central rib from each cabbage leaf.
- Place a spoonful of filling near the stem end of each leaf, fold in the sides, and roll up tightly into a compact parcel.
- Line the bottom of a large pot with any torn or spare cabbage leaves, then arrange the rolls snugly, seam-side down, in layers.
- Whisk the tomato paste into the vegetable stock and pour over the rolls, adding water if needed to just cover them.
- Drizzle the remaining oil on top, cover, and simmer gently for 1 to 1.5 hours, until the rice is fully cooked and the rolls are tender.
- Let rest for 10 minutes, then serve warm, spooned with cooking juices and scattered with parsley.
Introduction: Sarma, cabbage leaves rolled around a savory filling, is a beloved dish across the Balkans, but the Lenten version —
posne sarme — swaps the usual minced meat for rice, mushrooms, and vegetables. It is a fixture of Serbian
Orthodox Christmas Eve (Badnji dan), when the fast is at its strictest, and of ordinary Lenten Sundays throughout the
year. Families often make a large batch of pickled cabbage leaves in autumn specifically to have on hand for these
fasting feasts.

Tips: Roll the sarma snugly but not too tight — the rice will expand as it cooks. A layer of spare cabbage leaves on the pot's base prevents scorching during the long simmer. Pickled cabbage gives the most authentic tangy flavor; if using fresh, add a splash of vinegar to the cooking liquid.
Variations: Add chopped walnuts to the filling for extra richness, a common addition in some households. Use bulgur wheat instead of rice for a slightly nuttier, chewier texture. Swap mushrooms for lentils for a higher-protein filling.
Storage: Refrigerate in an airtight container for up to 4 days. Sarma also freezes well for up to 3 months.
Reheating: Reheat gently in a covered pot on the stovetop over low heat with a splash of water or stock, about 15 minutes, or in
the microwave until piping hot.
