Method

  1. Dissolve the yeast and a pinch of the sugar in the warmed coconut milk and leave for 10 minutes until frothy.
  2. Mix the flour, remaining sugar and salt in a large bowl, then work in the yeast mixture and coconut cream to form a soft, quite sticky dough.
  3. Cover and leave to rise in a warm place for about 2 hours, until doubled in size.
  4. Grease two loaf tins well, or shape the dough directly, and wrap tightly in overlapping softened banana leaves, tying securely with string.
  5. Leave the wrapped dough to prove for a further 45-60 minutes in a warm place.
  6. Place the parcel on a rack over simmering water in a large covered pot and steam for 50-60 minutes, until firm and cooked through.
  7. Unwrap carefully and allow to cool slightly before slicing and serving.
