Ingredients
- Lamb or beef, cut into small cubes — 600 g (1 1/3 lb)
- Lamb liver, cut into small cubes (optional but traditional) — 150 g (5 oz)
- Rendered fat or sunflower oil — 2 tbsp (30 ml)
- Large onions, sliced — 2
- Cumin seeds — 1 tsp
- Salt — 1 tsp
- Ground black pepper — 1/2 tsp
- Fresh dill, chopped, to serve — 2 tbsp
Method
- Heat the fat in a large heavy frying pan over medium-high heat.
- Add the meat cubes and fry, stirring occasionally, for 10–12 minutes until browned and much of the liquid has evaporated.
- Add the liver, if using, and cook for a further 5 minutes.
- Stir in the onions, cumin, salt and pepper, and continue frying for 10–15 minutes, stirring occasionally, until the onions are deeply caramelised and the meat is crisp at the edges.
- Taste and adjust seasoning, then scatter with fresh dill just before serving.
