- Chicken pieces, bone-in — 1.5 kg (3 1/3 lb)
- Lime juice — 1 tbsp

- Fresh coriander, chopped, to serve — 2 tbsp
Method
- Rub the chicken pieces with lime juice and half the salt, and marinate in the refrigerator for at least 2 hours.
- Grill the chicken over medium-high heat (or a hot grill pan) for 30–35 minutes, turning occasionally, until charred outside and cooked through.
- Meanwhile, make the coconut sauce: heat the oil in a saucepan over medium heat and fry the onion for 5 minutes until softened.
- Add the garlic and ginger, and cook for 1 minute, then stir in the curry powder and cook for 30 seconds.
- Add the chopped tomato and cook for 4–5 minutes until softened.
- Pour in the coconut milk and remaining salt, and simmer for 10–12 minutes, until slightly thickened.
- Add the sliced chilli, if using, and taste and adjust seasoning.
- Add the grilled chicken pieces to the sauce and simmer gently for 5 minutes, spooning the sauce over to coat.
- Scatter with fresh coriander and serve hot with rice or ugali.
