Ingredients
- Caribbean pumpkin (calabaza) or butternut squash, peeled and cubed — 1 kg (2.2 lb)
- Onion, chopped — 1
- Garlic, minced — 2 cloves
- Carrot, chopped — 1
- Thyme — 1 sprig
- Vegetable or chicken stock — 1 L (4 cups)
- Coconut milk — 250 ml (1 cup)
- Butter — 1 tbsp
- Ground nutmeg — 1/4 tsp

Method
- Melt the butter in a pot over medium heat and sauté the onion and garlic until soft.
