Ingredients

  • All-purpose flour — 350 g (2 3/4 cups)
  • Baking powder — 2 tsp
  • Salt — 1/2 tsp
  • Sugar — 150 g (3/4 cup)
  • Shredded coconut — 100 g (1 cup)
  • Eggs — 2
  • Vegetable oil — 120 ml (1/2 cup)
  • Coconut milk — 200 ml (3/4 cup)
  • Vanilla extract — 1 tsp

Method

  1. Preheat the oven to 180°C (350°F) and grease a loaf tin.
  2. Whisk together flour, baking powder and salt in a bowl.
  3. In a separate bowl, beat the sugar, eggs, oil, coconut milk and vanilla until combined.
  4. Fold the wet ingredients into the dry ingredients, then stir in the shredded coconut until just combined.
  5. Pour the batter into the prepared loaf tin, smoothing the top.
  6. Bake for 50-55 minutes until a skewer inserted in the centre comes out clean.
  7. Cool in the tin for 10 minutes before turning out onto a wire rack.
