Ingredients
- 500 g (4 cups) plain flour
- 7 g (1 packet) instant yeast
- 1 tsp sugar
- 1 tsp salt
- 300 ml (1.25 cups) warm milk or water
- 30 ml (2 tbsp) sunflower oil
- 500 g (17 oz) sulguni or imeretian cheese, grated (or a mix of mozzarella and feta)
- 1 egg, beaten, for brushing
Method
- Combine flour, yeast, sugar and salt in a large bowl. Add the warm milk and oil, and mix into a soft dough.
- Knead for 8-10 minutes until smooth and elastic, then cover and let rise in a warm place for 1 hour until doubled.
- Divide the dough in half. Roll each portion into a circle about 25cm across.
- Place a generous mound of grated cheese in the centre of each round, gather the edges up over the cheese, and pinch to seal into a ball.
- Turn the sealed ball seam-side down and gently flatten and roll out again into a disc about 2cm thick, being careful not to let the cheese burst through.
- Transfer to a baking tray, brush with beaten egg, and bake at 220°C (425°F) for 20-25 minutes until deep golden brown.
- Cool for 5 minutes before slicing into wedges to serve.
