Ingredients

  • - Whole chicken, spatchcocked -- 1.5 kg (3.3 lb)
  • - Garlic, minced -- 6 cloves (6 cloves)
  • - Fresh ginger, grated -- 2 tbsp (2 tbsp)
  • - Scotch bonnet peppers, minced -- 2 (2)
  • - Paprika -- 2 tsp (2 tsp)
  • - Vegetable oil -- 3 tbsp (3 tbsp)
  • - Lime, juiced -- 1 (1)
  • - Salt -- 2 tsp (2 tsp)

Method

  1. Blend garlic, ginger, pepper, paprika, oil, lime juice and salt into a thick marinade paste.
  2. Rub the paste generously all over the spatchcocked chicken, under the skin where possible, and marinate for at least 2 hours, or overnight for best flavour.
  3. Prepare a charcoal grill for medium indirect heat.
  4. Grill the chicken skin-side up first, turning occasionally and basting with any remaining marinade, for 40–50 minutes until cooked through and the skin is deeply charred in spots.
  5. Rest for 10 minutes, then chop into pieces for serving.
