Ingredients
- Medium Ripe tomatoes, diced — 4
- Medium Onion, finely sliced — 1

Method
- Place the sliced onion in a bowl of cold water for 5 minutes to soften its sharpness, then drain well.
- Combine the diced tomatoes, drained onion and chopped chili in a mixing bowl.
- Add the lemon or lime juice, oil (if using) and salt, and toss gently to combine.
- Scatter over the coriander, if using, just before serving.
- Serve immediately, at room temperature or lightly chilled.
