Ingredients

  • Scotch bonnet peppers — 4

  • Soy sauce — 30 ml (2 tbsp)
  • Fresh lime juice — 30 ml (2 tbsp)
  • Vegetable oil — 30 ml (2 tbsp)

Method

  1. Combine scotch bonnets (stems removed), scallions, onion, thyme, allspice, ginger and garlic in a food processor.
  2. Pulse to a coarse paste.
  3. Add brown sugar, soy sauce, lime juice and oil.
  4. Process again until a thick, well-combined marinade forms.
  5. Use immediately to marinate meat for several hours or overnight before grilling or smoking.
