Ingredients

  • 500 g (2.5 cups) long-grain rice
  • 300 g (10 oz) beef or chicken, cubed
  • 3 tomatoes, blended
  • 1 onion, chopped
  • 2 tbsp tomato paste
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Method

  1. Brown the meat in oil in a large pot, then remove and set aside.
  2. Saute onion and garlic in the same pot until fragrant.
  3. Add tomato paste and blended tomatoes, cook 5 minutes to reduce.
  4. Return the meat to the pot, add carrot and bell pepper, and enough water to just cover.
  5. Simmer 20 minutes until meat is tender, then stir in rinsed rice.
  6. Cover and cook on low heat for 20-25 minutes until rice is tender and liquid is absorbed.
