Ingredients
- Cassava leaves, pounded or very finely chopped (fresh or frozen) — 500 g (1 lb 2 oz)
- Eggplant, diced — 1
- Onion, chopped — 1
- Tomatoes, chopped — 2
- Ground peanuts — 35 g (1.25 oz)
- Oil — 2 tbsp
- Water — 240 ml (8 fl oz)
- Salt — to taste
Method
- Heat the oil in a large pot and sauté the onion until softened.
- Add the chopped tomato and cook for 5–6 minutes until it breaks down.
- Add the pounded cassava leaves, diced eggplant and water.
- Cover and simmer for 35–40 minutes, stirring occasionally, until the cassava leaves are tender and the eggplant has broken down.
- Stir in the ground peanuts and simmer for a further 10 minutes.
- Season with salt and serve hot with rice or ugali.
