  • 30 ml (2 tbsp) Vegetable oil
  • 100 ml (1/3 cup) Water
  • 3/4 tsp Salt

Method

  1. Heat the oil in a large frying pan and sauté the onion until softened, about 5 minutes.
  2. Add the garlic and ginger and cook for 1 minute until fragrant.
  3. Add the chopped collard greens in batches, stirring to wilt them down.
  4. Pour in the water, cover, and cook for 10–12 minutes, stirring occasionally, until tender.
