Ingredients

  • 500 g (4 cups) plain flour
  • 10 g (2 tsp) instant yeast
  • 80 g (1/3 cup) sugar
  • 1 tsp salt
  • 200 ml (3/4 cup plus 1 tbsp) coconut milk, warmed
  • 100 ml (1/3 cup plus 1 tbsp) warm water
  • 50 g (1/2 cup) desiccated coconut
  • 40 g (3 tbsp) butter, softened

Method

  1. Combine the flour, yeast, sugar and salt in a large bowl.
  2. Add the warm coconut milk and water, and knead for 10 minutes until a soft dough forms.
  3. Knead in the softened butter and desiccated coconut until evenly distributed.
  4. Cover and leave to rise for 1 hour, or until doubled.
  5. Shape the dough and place in a greased loaf tin, then prove for a further 30 minutes.
  6. Preheat the oven to 190°C (375°F) and bake for 30-35 minutes until golden and a skewer comes out clean.
