  • - 200 g (1 1/2 cups) cornmeal

  • - 200 ml (3/4 cup) warm water
  • - 2 tbsp vegetable oil, plus more for the pan

Method

  1. In a bowl, combine the cornmeal, flour, salt and baking powder.
  2. Add the warm water and oil, mixing until a soft, slightly sticky dough forms. Knead briefly for 2-3 minutes.
  3. Divide the dough into 6 equal balls and flatten each with a rolling pin into a disc about 15cm (6 inches) wide and 5mm thick.
  4. Heat a lightly oiled griddle or pan over medium heat.
  5. Cook each flatbread for 3-4 minutes per side until lightly charred spots appear and the bread is cooked through.
  6. Serve warm, alone or alongside soups and stews.
