Ingredients

  • - Fine white or yellow cornmeal -- 300 g (2 cups)
  • - Water -- 700 ml (3 cups)
  • - Salt -- a pinch (a pinch)

Method

  1. Mix a third of the cornmeal with 200 ml (3/4 cup) cold water to form a smooth paste.
  2. Bring the remaining water to a boil with a pinch of salt.
  3. Stir the cornmeal paste into the boiling water and cook, stirring, for 3 minutes until it thickens.
  4. Gradually add the remaining dry cornmeal, stirring vigorously and continuously to avoid lumps.
  5. Reduce heat to low and continue stirring and folding vigorously for 10–15 minutes until the dough turns smooth, thick and stretchy, pulling cleanly from the sides of the pot.
  6. Shape into smooth balls with a wet hand or spoon and serve warm alongside soup or stew.
