Method
- Dissolve yeast and sugar in the warm water; let stand 5 minutes until foamy.
- Combine flour and salt in a large bowl, then add the yeast mixture and olive oil, mixing to a soft, sticky dough.
- Knead briefly in the bowl, then cover and let rise 1 hour until doubled.
- Generously oil a baking tray, tip out the dough, and stretch it to fill the pan.
- Cover and let rise a further 45 minutes.
- Whisk together the brine ingredients, then dimple the dough all over with your fingertips and pour the brine evenly into the dimples.
- Sprinkle with extra coarse salt and bake at 220°C (425°F) for 20-25 minutes until deep golden.
