Ingredients

  • - All-purpose flour — 400g (3 1/4 cups)
  • - Eggs — 6 (6)
  • - Milk — 600ml (2 1/2 cups)
  • - Water — 400ml (1 3/4 cups)
  • - Sour cream — 200g (3/4 cup plus 1 tbsp)
  • - Butter, melted — 150g (2/3 cup)
  • - Salt — 6g (1 tsp)

Method

  1. Whisk together flour, eggs, milk, water, sour cream and salt until you have a thin, smooth batter.
  2. Preheat oven to 200°C (400°F) and brush a deep round pan generously with melted butter.
  3. Pour a thin layer of batter into the pan and bake for 5-7 minutes until just set.
  4. Brush the baked layer with melted butter, then pour another thin layer of batter over it and bake again.
  5. Repeat this process, layer by layer, for about 12-15 layers, brushing with butter between each.
  6. For the final layer, bake a little longer until deep golden on top.
  7. Rest for 15 minutes before slicing into wedges to reveal the layered rings inside.
