Fiji Coconut Bread

Ingredients
- 500 g (4 cups) Plain flour
- 7g (2 1/4 tsp) Instant yeast
- 60 g (1/4 cup plus 1 tbsp) Sugar
- 300 ml (1 1/4 cups) Coconut milk, warmed
- 50 g (1/2 cup plus 2 tbsp) Desiccated coconut
- 1 tsp Salt
- 40 g (3 tbsp) Butter, softened
Method
- Mix flour, yeast, sugar, salt and desiccated coconut in a large bowl.
- Add warm coconut milk and softened butter, mixing to form a dough.
- Knead for 10 minutes until smooth and elastic.
- Place in an oiled bowl, cover and prove for 1 hour until doubled.
- Punch down, shape into a loaf and place in a greased loaf tin.
- Prove for a further 30 minutes, then bake at 190°C (374°F) for 30–35 minutes until golden and hollow-sounding when tapped.
- Cool on a wire rack before slicing.
