Method

  1. Heat the oil in a very large pot and sauté the onion and carrot until softened.
  2. Add the rice, coconut milk and water, stirring to combine.
  3. Bring to a boil, then cover and reduce to low heat, cooking for 20–25 minutes until the rice is tender and the liquid absorbed.
  4. Gently fold in the flaked fish, being careful not to break it up too much.
  5. Season with salt and let sit, covered, for 5 minutes before serving to the gathered guests.
