Ingredients
- 2 pieces stale flatbread, torn and toasted
- 2 tomatoes, chopped
- 1 cucumber, chopped
- 4 radishes, thinly sliced
- 1 green pepper, chopped
- 4 spring onions, sliced
- 1 bunch parsley, chopped
- 1 bunch mint, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp pomegranate molasses
- 1 tsp ground sumac, plus extra to garnish
- 1/2 tsp salt
Method
- Toast the torn flatbread in a dry pan or oven until crisp and golden, about 8 minutes.
- Combine the tomatoes, cucumber, radishes, green pepper, spring onions, parsley and mint in a large bowl.
- Whisk together the olive oil, lemon juice, pomegranate molasses, sumac and salt in a small bowl.
- Pour the dressing over the vegetables and toss well.
- Add the toasted bread just before serving and toss briefly so it stays crisp.
- Sprinkle with extra sumac and serve immediately.
