  • Plain flour — 200 g (1 2/3 cups)
  • Arrowroot starch — 100 g (1 cup)
  • Baking powder — 1 tsp
  • Salt — 1/2 tsp
  • Coconut milk, plus extra as needed — 200 ml (3/4 cup plus 1 tbsp)
  • Coconut oil, plus extra for cooking — 1 tbsp

Method

  1. Mix the flour, arrowroot starch, baking powder and salt in a bowl.
  2. Gradually add the coconut milk and coconut oil, mixing to form a soft, slightly sticky dough, adding a little more coconut milk if needed.
  3. Cover and rest for 20 minutes.
  4. Divide the dough into 6 pieces and roll each into a thin round, about 15 cm (6 in) across.
  5. Heat a lightly oiled non-stick skillet over medium heat and cook each flatbread for 2–3 minutes per side, until lightly golden with brown spots and cooked through.
  6. Serve warm.
