Ingredients

  • - 4 medium courgettes/zucchini, sliced into rounds (about 700 g)
  • - 30 ml olive oil (2 tbsp olive oil)
  • - 1 tsp ground cumin
  • - 15 ml white wine vinegar (1 tbsp white wine vinegar)
  • - 1 tsp honey
  • - 1 tbsp fresh mint, chopped
  • - Salt, to taste

Method

  1. Heat the olive oil in a wide frying pan over medium heat.
  2. Add the courgette rounds and cook for 5 minutes, turning occasionally, until lightly golden.
  3. Sprinkle over the cumin, cover, and reduce the heat to low. Braise for 10 minutes, until tender.
  4. Uncover, stir in the vinegar and honey, and cook for a further 2-3 minutes to glaze lightly.
  5. Season with salt, scatter with fresh mint, and serve warm.
