Ingredients
- 280g (2 cups) Cornmeal
- 120g (1 cup) Flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 eggs
- 360ml (1.5 cups) Milk
- 60g (1/4 cup) Butter, melted
- 2 tbsp molasses
Method
- Preheat the oven to 200°C (400°F) and grease a baking dish or cast iron skillet.
- Combine the cornmeal, flour, baking powder and salt in a bowl.
- Whisk together the eggs, milk, melted butter and molasses in a separate bowl.
- Combine the wet and dry ingredients, mixing just until combined.
- Pour into the prepared dish.
- Bake for 20–25 minutes until golden and a skewer comes out clean.
