Method

  1. Combine the rinsed rice and water in a large pot and bring to a boil.
  2. Reduce heat to very low, cover partially, and simmer for 60-75 minutes, stirring occasionally, until the rice breaks down into a thick, creamy porridge.
  3. Stir in the salt in the final 10 minutes of cooking.
  4. Ladle into bowls and top with spring onion, sesame oil and any desired toppings.
