  • Scotch bonnet pepper, finely minced (seeds removed for less heat) — 1/2
  • Garlic, minced — 2 cloves
  • Fresh thyme leaves — 1 tbsp (1 tbsp)
  • Salt and black pepper, — to taste
  • Vegetable oil, for deep frying
  • Lime, cut into wedges, to serve — 1

Method

  1. Tenderise the conch meat by pounding it gently with a mallet, then chop it finely.
  2. In a large bowl, whisk together flour, baking powder, egg and milk to form a thick batter.
  3. Fold in the chopped conch, onion, sweet pepper, scotch bonnet, garlic and thyme . Season with salt and black pepper.
  4. Heat oil in a deep pot to 180C (350F).
