  • - 3 tbsp mayonnaise
  • - 1 tbsp ketchup
  • - 1 tsp fresh lime juice
  • - A dash of hot sauce

Method

  1. In a large bowl, whisk together the flour, baking powder, egg and milk to form a thick batter.
  2. Fold in the diced conch, sweet pepper, onion, spring onions, garlic, thyme and scotch bonnet if using. Season with salt and pepper.
  3. Heat the oil in a deep pot to 180°C (355°F).
  4. Carefully drop tablespoon-sized portions of the batter into the hot oil, frying in batches of 5-6 to avoid crowding.
  5. Fry for 3-4 minutes, turning once, until deep golden brown and cooked through.
  6. Remove with a slotted spoon and drain on paper towel.
