Ingredients

  • 1 whole suckling pig (approx. 4–5kg / 9–11 lb), cleaned and prepared by a butcher
  • 6 garlic cloves, minced
  • 2 tbsp salt
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp black pepper
  • 2 lemons, juiced
  • 1 onion, quartered (for the roasting tray)

Method

  1. The night before, rub the pig all over, inside and out, with the garlic, salt, olive oil, oregano, pepper and lemon juice.
  2. Cover and refrigerate overnight to marinate.
  3. Preheat the oven to 160°C (325°F). Place the pig in a large roasting tray with the quartered onion underneath.
  4. Roast for approximately 2 hours, basting occasionally with the pan juices, until the internal temperature reaches 75°C (165°F).
  5. Increase the oven temperature to 220°C (425°F) for a final 20–30 minutes to crisp the skin, watching closely to avoid burning.
  6. Rest for 15–20 minutes before carving and serving to the table.
