Method

  1. Dissolve yeast in warm milk with a pinch of the sugar; let stand 5 minutes until foamy.
  2. Combine flour, remaining sugar and lemon zest in a large bowl.
  3. Add the yeast mixture, eggs and softened butter, kneading into a smooth, elastic dough for 10-12 minutes.
  4. Knead in the chopped candied fruit until evenly distributed.
  5. Cover and let rise for 1 hour until doubled.
  6. Shape into a flattened oval or round loaf and place on a baking tray.
  7. Cover and let rise again for 30 minutes.
  8. Preheat oven to 180°C (350°F).
  9. Brush with beaten egg and scatter pine nuts over the top.
  10. Bake for 25-30 minutes until golden and cooked through.
