Ingredients

  • - 3 cups (375 g) all-purpose flour

Method

  1. If time allows, soak the dried fruit in the rum or brandy for a few hours or overnight.
  2. Preheat the oven to 170°C (340°F) and grease and line the tin.
  3. Cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the milk.
  5. Sift in the flour, baking powder and spice, folding gently until just combined.
  6. Fold in the soaked fruit and walnuts.
  7. Pour the batter into the prepared tin and bake for 55-65 minutes, until a skewer inserted in the center comes out clean.
  8. Let cool in the tin for 15 minutes before turning out onto a rack. Wrap and rest for at least a day before slicing for the best flavor.
