Ingredients

  • - 300 g (10 oz) dried edible caterpillars, rehydrated in warm water
  • - 2 tbsp palm oil
  • - 1 onion, finely chopped
  • - 2 garlic cloves, minced
  • - 1 tsp chilli powder, or to taste
  • - 1 tsp salt
  • - 1 tbsp lime juice

Method

  1. Soak the dried caterpillars in warm water for 20 minutes, then drain thoroughly.
  2. Heat the palm oil in a frying pan and sauté the onion and garlic until golden.
  3. Add the caterpillars, chilli powder and salt, tossing to coat evenly.
  4. Transfer to a hot grill or grill pan and grill for 6-8 minutes, turning occasionally, until lightly crisped.
  5. Squeeze lime juice over the top just before serving warm as a starter.
