Ingredients

Method

  1. For the pastry, combine the flour, turmeric and salt in a bowl. Rub in the cold butter until the mixture resembles coarse breadcrumbs. Add the cold water gradually and mix until a firm dough forms. Wrap and refrigerate for 30 minutes.
  2. For the filling, heat the oil in a pan over medium heat and sauté the onion for 4 minutes until softened. Add the garlic and cook for 30 seconds.
  3. Add the ground beef, breaking it up as it browns, about 6-7 minutes.
  4. Stir in the curry powder, thyme and scotch bonnet if using, cooking for 1 minute until fragrant.
  5. Add the breadcrumbs and beef stock, stirring until the mixture thickens and clumps together. Season with salt and pepper. Cool completely.

  8. Place the patties on a lined baking tray, brush with beaten egg, and bake for 25-30 minutes until golden brown and crisp.
