Method
- Heat the oil in a large pot and sauté the onion until softened.
- Add the garlic, ginger and curry leaves, frying until fragrant.
- Stir in the curry powder and turmeric, cooking briefly to toast the spices.
- Add the chicken pieces, browning lightly on all sides.
- Add the chopped tomatoes and thyme, cooking for 5 minutes.
- Pour in the water, bring to a simmer, cover and cook for 30–35 minutes until the chicken is tender.
- Season with salt and serve hot with rice.
