Ingredients
- 300 g Plain flour
- 60 g Fine cornmeal
- 400 ml Warm water
- 5g Instant yeast
- 2g Ground cardamom
- 2g Ground cinnamon
- 20 g Sugar
- 4g Salt
- 30 g Butter, melted, to finish
- 150 g Plain yogurt, to serve
Method
- Whisk together the flour, cornmeal, yeast, cardamom, cinnamon, sugar and salt in a large bowl.
- Gradually whisk in the warm water to form a smooth, pourable batter.
- Cover and leave to ferment at room temperature for 1.5-2 hours, until bubbly.
- Heat a lightly greased griddle or pan over medium heat and pour a ladleful of batter, spreading slightly into a thick round.
- Cover with a lid and cook for 3-4 minutes until the top sets and small holes appear, then flip and cook for a further 1-2 minutes.
- Stack the cooked cambaabur and drizzle with melted butter.
- Serve warm, topped generously with plain yogurt.
