Ingredients
- Goat meat, bone-in, cut into large pieces — 2 kg (4.4 lb)
- Garlic, minced — 6 cloves
- Ground ginger — 2 tbsp
- Paprika — 1 tbsp
- Olive oil — 1/4 cup (60 ml / 2 fl oz)
- Lemon juice — 2 tbsp
- Salt and pepper — to taste
Method
- Combine the garlic, ginger, paprika, olive oil, lemon juice, salt and pepper into a marinade.
- Coat the goat pieces thoroughly and let marinate for at least 4 hours, ideally overnight in the refrigerator.
- Preheat the oven to 160°C (325°F).
- Place the marinated goat in a roasting pan and cover tightly with foil.
- Roast for 3–3.5 hours, basting occasionally, until the meat is very tender.
- Uncover for the final 20–30 minutes to allow the exterior to brown.
- Let rest for 10 minutes before serving to the gathered family.
